Steamed Purslane

1 bunch purslane
1 garlic clove, minced
Olive oil
Salt and pepper, to taste
Cotija or Parmesan cheese

1. Fill a small saucepan or wide skillet with 1 cup of water, and add a garlic clove. Turn the heat to medium/high.
2. Bring the water to a boil, add the purslane, and reduce the heat to low. Cover the pan and keep cooking for 5-6 minutes.
3. Remove from heat and drain.
4. Season with olive oil, salt, and pepper.
5. Dust with desired cheese and enjoy this underappreciated, but powerful green.
